Weekend Deal!

I like to use extra time on the weekend to prep some of my weekday meals or make them in advance.  I already shared that the Doritos were on sale this week, so I’ll be making mexican casserole this weekend.  Tonight I made a delicious lasagna.  Hunts canned tomatoes are also on sale this weekend so I’ll be making homemade spaghetti sauce.

Not Your Mama’s Lasagna

1 pkg lasagna noodles cooked

1 large jar tomato sauce

1 lb. ground beef cooked

1 jar alfredo sauce

6 slices provolone cheese

6 slices swiss cheese

1 pkg (8oz) shredded mozzarella

1 pkg parmesan cheese

1 box frozen spinach thawed and squeezed dry

In a 9×13 baking dish spread around 1/2 cup tomato sauce.  Layer with 4 lasagna noodles across.  Crumble thawed spinach over noodles and then sprinkle with half of shredded mozzarella and half of parmesan.  Lay 4 noodles down.  Mix tomato sauce and ground beef together.  Spread half over noodles.  Lay down another 4 noodles.  Arrange 6 slices of provolone on top of noodles, then 6 slices of swiss, pour jar of alfredo over cheese.  Layer with 4 more noodles.  Spread remaining sauce and meat mixture over.  Top with remaining noodles.  Sprinkle with remaining shredded mozzarella and parmesan cheese.  Cover with foil and chill till ready to bake at 350 for 30-40 minutes till heated through and cheese is melted and  bubbly.

Jimmy Dean sausage 2 for $5

Ever have a scotch egg?  Here’s a mighty protein breakfast.  Hard boil 6 eggs.  Cool and peel.  Mix the sausage with about 1/2 cup of shredded cheddar cheese.  Cover the hard-boiled eggs in the sausage cheese mixture and place on a baking sheet and bake at 375 for 20 minutes.

I am going to get a whole chicken this week to roast or throw in the crockpot and serve with roasted vegetables.  Between that and left overs I think we’ll be set.  I’ll be looking for new recipes this week to share for next weeks meals.  Challenge yourself to try one new recipe each week!
