MONDAY: Mexican pizza

1pkg. cresent rolls

1 can refried black beans

1 Tbs. taco seasoning (or cumin and a little garlic powder)

1c. shredded cheddar cheese

1 small can sliced black olives and / or green chilies

2-3 roma tomatoes seeded and chopped

4 green onions chopped

sour cream and/or guacamole

Het oven 375.  On a baking sheet sprinkle cornmeal or spray with cooking spray.  Roll out cresent rolls and press seems together.  Bake 10 minutes.  Mix beans and seasoning.  Spread over baked cresents.  Sprinkle with cheese, place back in overn for 5-8 minutes till cheese is melted.  Sprinkle tomatoes, olives, onions, and chilies over top.  Serve with sour cream and guacamole.

TUESDAY: Steak Sandwiches

  • 1 red onion, sliced
  • Cooked flank steak slices, about 12 ounces
  • 4 to 6 slices Swiss cheese
  • 1/2 cup mayonnaise
  • 2 tablespoons honey
  • 1/2 teaspoon powdered garlic
  • 4 long rolls

Heat a large skillet.  Spray with cooking spray.  Add onions and sprinkle with salt.  Cook till soft.  Add sliced steak.  Season with salt and pepper. Cook 2-3 minutes or until desired doneness.  Place cheese on top, cook till melted. In a small bowl, whisk together mayo, honey and garlic. Spread mayonnaise mixture on rolls and top with seared onion slices and cheese-smothered steak.

WEDNESDAY: Crockpot chipolte lime chicken thighs

  • 1 small inion sliced
  • 1 cup chopped carrots
  • 4 pounds skinless chicken thighs
  • 1 (15-ounce) can tomato sauce
  • 1/4 cup lime juice
  • 1 tablespoon minced chipotle chiles in adobo sauce with 1 teaspoon sauce from can
  • 2 cloves garlic, minced
  • 1 avocado diced

Arrange onion and carrots in bottom of crock pot. Season chicken thighs with salt and pepper and arrange over vegetables.  In a bowl, wisk together tomato sauce, lime juice, chipotle chiles with sauce, and garlic. Pour mixture over chicken.  Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours. Serce and top with diced avocado.

Coastal Rice and Peas:

  • 2 cups instant white rice
  • 1 (14-ounce) can coconut milk
  • 1 cup water
  • 1 (15-ounce) can red beans, drained
  • 1 teaspoon dried thyme
  • 1/2 teaspoon finely grated lime zest
  • 3 chopped green onions

In a saucepan, combine rice, coconut milk, water, beans, thyme and lime zest. Set pan over high heat and bring to a simmer. Reduce heat to low, cover and simmer 5 minutes, until liquid is absorbed. Fold in scallions and season to taste with salt and pepper.

FRIDAY: Baked Tortellini

  • Olive oil
  • 2 cups spaghetti sauce
  • 1/3 cup cream cheese
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon thyme
  • 1 pound cheese tortellini
  • 4 slices mozzerella
  • 1/4 cup  Parmesan

Heat oven to 350 degrees F. Lightly oil an 8 x 8  baking dish.

Whisk the sauce, cream cheese, parsley and thyme in a large bowl to blend. Cook the tortellini in a large pot of boiling salted water until just tender. Drain. Add the tortellini to the sauce and toss to coat. Transfer the tortellini mixture to the baking dish. Top the mixture with the mozzarella and parmesan. Cover and bake until the sauce bubbles and cheese melts, about 30 minutes.
