MONDAY- Pot Roast with vegetables

3.5 lbs rump or chuck roast

1 tsp each of salt, pepper and garlic salt

2 garlic cloves sliced

1/4c. flour

3 Tbs oil

2 c. brewed coffee

1 can cream of mushroom soup ( or celery soup for the mushroom haters)

1 Tbs. Worcestershire

1 onion sliced

3 tbs. cornstarch mixed with 3 Tbs water for thickening gravy

Cut slits in roast and push garlic in  Sprinkle with seasonings.  Dredge in four and brown on all sides in oil.  Stir coffee, soup and Worcestershire pour over roast.  Top with onions.  Reduce heat and simmer covered for 3 hours and 40 minutes (can do this part in a crock pot on low for 6 hours) Remove roast and add cornstarch slurry to drippings.  Boil and cook till thick, serve with roast.

Before roast is done, cut up potatoes and carrots into chunks and place in one layer on an oiled roasting pan.  Preheat oven to 400 and roast potatoes for 30-40 minutes.  Serve with roast.

TUESDAY: Spaghetti with beef

Use leftover pot roast for spaghetti sauce.  You can make it from scratch or open a can or jar and heat up the sauce and add the meat.  Serve over spaghetti or your favorite pasta with parmesan and texas toast.

Amy’s Homemade Sauce:

3 cans Hunts fire roasted tomatoes

2 cloves garlic minced

1 tbs tomato paste

1/2 onion diced

1 tbs basil


2 tbs sugar

In a pot heat 2 Tbs olive oil.  Add garlic, onion and a large pinch of salt, saute about 5 min- till soft, but not burned.  Add tomatoes, tomato paste and basil.  Cook on medium heat about 10 minutes.  Let cool and puree in blender or food processor.  Pour back into pot and add sugar to balance out the acidity of the tomatoes.

WEDNESDAY Herb Chicken Thighs

1/3 c. white wine

2 Tbs fresh chives

1 Tbs parsley

1 minced garlic clove

2 Tbs lemon juice

2 Tbs olive oil

2 tsp greek seasoning (oregano, thyme, basil, onion powder, garlic powder) or herbs de provence (thyme, chevril, rosemary,lavender, tarragon, marjoram, oregano)


8 chicken thighs

Combine all ingredients in a ziplock bag and chill at least 4 hours.  Bake 400 degrees for 25 minutes or till done.

Serve with a salad and couscous

THURSDAY Huevos Rancheros

4 six inch corn tortillas

2 Tbs vegetable oil

4 eggs

1 c. shredded monterey jack


1 can black beans

avocados and tomatoes sliced

Fry tortillas 1 at a time in oil just till soft.  Drain on a paper towel.  Break eggs into oil and cook 2 minutes.  Place an egg in center of tortilla, top with cheese and salsa.  Serve with black beans and an avocado/tomato salad.


2 chicken breasts- cooked in crock pot and shredded ( or cooked on stove and shredded)

BBQ sauce

2 Tbs ketchup

1/2 Tbs Worcestershire


1 box jiffy cornbread- following package directions

coleslaw or black eyed peas

Mix BBQ sauce, ketchup and Worcestershire with shredded chicken.  Serve in buns with cornbread and coleslaw or black eyed peas.


1 can black eyed peas

3 strips bacon

1/2 c. onion diced

1/2 c. chicken stock


Diced up bacon and cook till slightly browned.  Add onion and continue to cook till soft.  Add drained peas, and chicken stock.  Simmer till most of stock is gone.  Season with salt to taste.
