Here’s a tip: if you are feeding a family or 4 or more why not double some of these recipes and through them in the freezer? I like to make a meal or two on sunday so I am ahead for the week. If you have a smaller family then make the recipes but divided them into two smaller dishes and then freeze one. It never hurts to have extra meals on hand!

MONDAY: Layered Enchiladas
3 cooked boneless chicken breasts diced
1 (28oz or 2 15oz) can mild red enchilada sauce
1 container sour cream 8oz
1 can evaporated milk 12 oz
1 pkg shredded cheddar or mexican blend cheese 8oz
1 can green chilies, undrained 4oz
1 pkg corn tortillas
Preheat oven 350. Combine sour cream and enchilada sauce in a bowl. Combine milk, cheese and chilies in a sauce pan and heat over low heat till cheese is melted, then remove from heat. In a 9×13 pan spread about 1 c. enchilada sauce over bottom of pan. Roughly cut or rip up about 5 tortillas and layer on top of sauce. Spread another cup of enchilada sauce on top, then about 1 1/2 cups of chicken and about 1 cup of the cheese sauce. Repeat layers one more time starting with tortillas. Top with remaining tortillas, and sauces. Cover with foil. Freeze, chill or bake for 40 minutes, uncover the last 10 minutes. If frozen pull out the night before and thaw in fridge. It may need to cook a little longer.
TUESDAY: Sausage and Peppers
4-6 Italian sausages ( I like the chicken parmesan sausages at Sprouts- on sale this week $2.99/lb)
1 jar of your favorite spaghetti sauce (or make your own)
2 green peppers sliced
1 large onion sliced thin
cooked pasta (optional- you could serve it on buns)
On the grill or in a pan brown sausages. In a skillet at 2 Tbs. olive oil and add onions and peppers. Sprinkle about 1/2-1tsp salt and cook till golden. When sausages are browned add sauce and cover or simmer on low for about 10 minutes. Serve sausages and peppers and onions over pasta or in a bun.
WEDNESDAY: Moroccan Stew
2 Tbs, oilive oil
8 boneless skinless chicken thighs
1 medium red onion sliced
1 green pepper chopped
2 cloves garlic minced
1 tsp. cinnamon
1 tsp. curry powder
1 can condensed tomato soup
1/3 c, golden raisins
1 can drained chick peas ( garbanzo beans)
1/3 c. toasted slivered almonds
Heat oil in a saucepot over medium heat. Add chicken and cook till browned on both sides. Remove chicken. Add onions, pepper and garlic. Cook 5 minutes. Add seasonings and cook another minute. Stir in soup and heat to a boil. Return chicken and reduce heat to low. Cover and cook 15 minutes. Stir in raisins and chickpeas. Cook 10 minutes. Stir in almonds and serve.
THURSDAY: Pot Pie
1lb ground beef
2 carrots chopped
1 large onion choppped
1 cloves garlic chopped
1-2 potatoes peeled and chopped
1/2 c. beer (I like it with Shiner Bock, but a dark beer will do well too)
8 oz shredded cheddar cheese
1 sheet thawed puff pastry
Heat oven 375. In a skillet cook beef till browned. Drain and add vegetables and 2 tsp salt. Cook about 10-15 minutes. Lower the heat and add beer. Cook 10 minutes. Add cheese. Place mixture into a 10″ pie dish. Top with thawed puff pastry. Brush top with a little milk. Cut a small X into the top to let the steam escape. Bake about 35-40 minutes till top is golden brown.
