Meal Plan 6.1.11 Family Favorites June 1, 2011

Filed under: Hot Deals,Meal Planning — clappingonthedownbeat @ 9:58 PM

I have lucked out running into Kroger’s for a last minute item.  Last week I scored Horizon’s organic 1lb butter for $1.50 each.  I bought all 4 I found marked that way.  This week they had Horizon’s organic milk $2.99 a gallon because the sale by date was June 5.  I know my son will drink a gallon in that time.  If you can try grocery shopping in the evening and take your time to look through the store.  IF you shop at Kroger or Tom Thumb, it’s a great place to snag gift items sometimes.  They often are getting rid of seasonal merchandise or other non-food items at 75-90% off.  I scored a cute set of kitchen towels with a popcorn recipe on them for $.80 each and seasonal cupcake wrapers 100 for $.50.

So, with summer around the corner, I was lazy this week and resorted back to making some of our favorite meals.  Here’s the recap:
SUNDAY: Mexican casserole
1 bag crushed doritos
1 lB. cooked ground beef
1 can Ranch style beans
1 jar salsa
1 can cream of mushroom soup
1 can rotel
1 pkg shredded cheddar
Mix all in a large bowl.  Pour into a 13×9 pan and bake 350 for 20 minutes till heated through and cheese melts.  I like to make it a day a head and keep it in fridge till ready to heat.  Serve with sour cream.
MONDAY: Quick Fix Sloppy Joes
  • 1 1/2 pounds  ground beef
  • 1 can diced tomatoes
  • 1 cup ketchup
  • 1/2 cup bottled barbecue sauce
  • 1 tablespoon Worcestershire sauce
  • 1 package frozen garlic Texas toast
  • 1 cup shredded Cheddar cheese
  • 1. Brown ground beef in a large skillet over medium-high heat, stirring often, 8 to 10 minutes or until beef crumbles and is no longer pink; drain well. Return to skillet. Stir in tomatoes, next 3 ingredients, and, if desired, jalapeño peppers and liquid. Cover and cook 10 minutes.
  • 2. Meanwhile, prepare Texas toast according to package directions. Serve beef mixture over Texas toast; sprinkle with cheese.
TUESDAY: Asian
Rice (frozen), Egg Rolls (frozen), potstickers (frozen), and lettuce wraps (frozen), edamame
I think I have showed you the pics but we love the Tai Pei brand of frozen asian products.  This is a huge favorite in our house and it cooks up quick.
WEDNESDAY: Burgers on the grill with sweet potato baked fries
THURSDAY: Pizza
FRIDAY:  Pasta with marinara sauce
