MEATLESS MONDAY: Manicotti (this is one of my favorites!)

Crepes (you can buy, but thery are easy to make)

In a blender whip 2 eggs, 1 cup flour, 1 cup milk, 2 Tbsp oil, and a pinch of salt.  In a hot skillet spray a little cooking spray and pour just enough batter to coat the bottom of the pan.  Swirl it around so it coats evenly.  It cooks quick so keep an eye on it till the batter sets, then slip it out fo the pan and finish making the rest.  Stack them on a plate.

Mix 1 container of ricotta cheese, 1 egg, 1 pkg shredded mozzarella ( or italian blend cheese), and I like chopped artichokes, but you could do spinach, sauteed mushrooms, cooked asparagus…..whatever.  Place a spoonful of filling in each crepe and roll up.  Pour 1 cup tomato sauce in the bottom of a 9×13 pan and lay the manicotti in.  Drizzle a little more sauce over and bake at 375 for about 20 minutes till hot.

TUESDAY: Mini greek meatloves and pasta salad

1 pkg ground beef

1 egg

3/4 c. bread cumbs

2 Tbs greek seasoning

Mix well and scoop a 1/4c. size and roll into a ball.  Place in a muffin tin.  When all the meat is in the tin back at 350 for 20 minutes.

Cook 1 box of shaped pasta.  Drain and when cooled add 1 pkg crumbled feta cheese, 1 chopped cucumber, 1 can garbanzo beans, 1 pkg  cherry tomatoes, 1/2 red onion sliced ( you can add chicken, black olives, and artichokes if you like).  Pour 1/2-3/4 a bottle of ceasar dressing over the pasta and toss.

WEDNESDAY: BBQ Chicken sliders and potato salad

In a crock pot cook 4 chicken breasts.  When cooked take 2 forks and shred meat.  Add bottled BBQ over top and set on warm.  I but Sara Lee buns and I slice in half and top each with chicken and a little cole slaw.

Potatoe Salad: 1 pkg red potatoes boiled and then mashed.  4 boiled eggs, sliced.  Mix potatoes and eggs and add 1/4c. sour cream, 1/2 c. mayo, 1 tbs mustard, 1-2 tbs dill relish.

THURSDAY: Bloody Mary Steak with baked tomatoes and polenta

  • 1 cup vegetable juice (recommended: V-8)
  • 1/2 cup vodka
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon hot sauce
  • 1 tablespoon lemon juice
  • 1 tablespoon Worcestershire
  • 1/2 tablespoon crushed garlic
  • 1 teaspoon onion powder
  • 1 teaspoon celery seed
  • 1 tablespoon prepared horseradish
  • 4 tablespoons olive oil
  • 1-pound flank steak

Thoroughly mix all the ingredients except for the steak in a 1-gallon zip lock bag. Add the flank steak. Marinate in the refrigerator for at least 8 and up to 24 hours.  Preheat the grill to high or heat a skillet over high heat. Remove the flank steak from the marinade  and wipe the excess liquid off with paper towels. Grill or pan sear both sides, then lower heat to medium and cook to medium rare. Let the flanks steak rest, covered, with a clean towel for 5 to 10 minutes. Cut on the bias against the grain and serve.

I buy a prepared roll of polenta in the pasta aisle.  I oil sheet pan well and slice the polenta in 1/2″ thick rounds and bake at 400 for about 20 minutes and then flip over for another 20 minutes.  THe last 10 I slice a tomato and place on top of the polenta, slprinkle with a little sea salt and finish baking.

FRIDAY: Pizza on the grill

Grab your favorite pizza dough and top it your way, then through it on the grill!
