Last night I had a culinary midterm.  It has been a really long time since I have had to sit for an exam.  It covered 10 chapters from the text book and everything we had covered in class.  All we were told was that there would be a practical and a written portion.  So here’s how it went.

We began with the practical.  There was a part A and a part B.  Part A had to be done first and presented before we could go on.  And this part was all timed.  We were also graded on our mis en place (organization and preparation of task).  We had to do 2 tournes from a potato, Julienne celery, bruniose carrots, medium dice half an onion, and segment an orange.  Part B was to make a 3 egg hollandaise and 1/2 pint of bechamel sauce, from memory, and saute a chicken breast.  The chicken breast was to be plated with one of the sauces, and garnished with sautéed carrot from part A.  I was really nervous that I was being watched while I cooked.  I gathered all the equipment and started a water bath and sautéed the chicken first since it would take the longest.  Then I made the bechamel because it would have to simmer for 15 minutes, then I made the hollandaise, which I scrambled the eggs the frist time and had to start over.  I think I did ok.  It all tasted good.  The written portion was 4 pages of short answer.  It was brutal.  But over till the final!
