I love Mac and Cheese it is one of my comfort foods when I am sick and when it is cold or rainy outside, well that and a bowl of soup and grilled cheese.  Anyway, here it is in many different versions:

Pesto Alfredo Mac

  • 14 1/2 ounce box Barilla Plus farfalle
  • cups packed basil
  • 1/2 cup pine nuts, toasted
  • garlic cloves, roughly chopped
  • 1/3 cup olive oil
  • 2/3 cup shredded Parmesan
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • tablespoons unsalted butter
  • tablespoons all-purpose flour
  • cups 2% milk
  • 1/8 teaspoon nutmeg
  • cups shredded mozzarella
  • pint grape tomatoes, halved

1. Bring a large pot of lightly salted water to boiling. Add farfalle and cook 10 minutes; drain and set aside.

2. Meanwhile, in a food processor, combine basil, 1/4 cup of the pine nuts and the garlic. With machine running, slowly add oil in a thin stream until well combined. Remove to a small bowl and stir in 1/3 cup of the Parmesan, the salt and pepper. Set aside.

3. In a large saucepan, melt butter on medium heat. Sprinkle in flour, whisking constantly for 2 minutes. Pour in milk, nutmeg and pesto, whisking until the liquid comes to a boil. Simmer until thickened, about 2 to 3 minutes. Remove from heat and stir in 11/2 cups of the mozzarella and remaining 1/3 cup Parmesan. Mix until smooth.

4. Stir in tomatoes and pasta. Fold remaining 1/2 cup mozzarella into mixture; pour into serving dish. Top with remaining 1/4 cup pine nuts.

Cheddar-Apple Sausage Mac

  • pound rigatoni
  • 12 ounce package sweet apple-chicken sausage, sliced
  • tablespoons unsalted butter
  • Granny Smith apples, cored, peeled and sliced
  • 1/2 small sweet onion, sliced
  • 1/8 teaspoon teaspoon each salt and pepper
  • tablespoons all-purpose flour
  • 1 1/2 cups 2% milk
  • tablespoon Dijon mustard
  • cups shredded extra sharp cheddar cheese
  • 1/2 cup panko bread crumbs

1. Heat oven to 350 degrees . Coat a 13 x 9 x 2-inch broiler-safe baking dish with nonstick cooking spray. Bring a large pot of lightly salted water to boiling. Add rigatoni and cook for 13 minutes, or as per package directions. Drain and return to pot.

2. Coat a large nonstick skillet with nonstick cooking spray and place over medium-high heat. Add sausage and cook 4 minutes, stirring until browned. Remove to a plate with a slotted spoon and keep warm.

3. Stir 1 tablespoon of the butter into same skillet. Add apples and onion and cook 5 minutes over medium heat. Remove from heat and stir in sausage, salt and pepper. Add to pasta in pot.

4. Meanwhile, melt remaining 2 tablespoons butter overmedium heat in a medium saucepan. Whisk in flour andcook 1 minute. Pour in milk and mustard and bring to a simmer. Cook 3 minutes, whisking occasionally. Remove from heat and whisk in cheese. Stir into pasta mixture in pot.

5. Pour pasta mixture into prepared dish. Top with panko.Bake at 350 degrees for 25 minutes. Increase oven temperature to broil and broil dish for 3 minutes until lightly browned.

SMOKY WILD MUSHROOM MAC

  • pound campanelle
  • tablespoons unsalted butter
  • tablespoon olive oil
  • 1/2 cup diced shallots
  • 1 1/2 pounds mixed wild mushrooms (cremini, shiitake and oyster), tough stems removed, sliced
  • tablespoon chopped fresh thyme
  • cloves garlic, minced
  • tablespoons all-purpose flour
  • cups 2% milk
  • 10 ounces smoked Gouda, shredded
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

1. Heat oven to 350 degrees . Bring a large pot of lightly salted water to boiling. Add campanelle and cook 8 minutes, or about 1 to 2 minutes less than package directions. Drain and set aside.

2. Meanwhile, in a large saucepan, heat 1 tablespoon of the butter and the oil over medium heat. Add shallots and cook 3 minutes. Stir in mushrooms and thyme; cook 5 to 7 minutes. Add garlic and cook another 1 to 2 minutes.

3. Add remaining 1 tablespoon butter to saucepan; when melted, sprinkle in flour, whisking for 2 minutes. Pour in milk, whisking until liquid comes to a boil. Simmer until thickened, about 3 minutes. Remove from heat and stir in cheese, salt and pepper until smooth. Stir in cooked campanelle.

4. Pour mixture into a 13 x 9 x 2-inch baking dish. Bake at 350 degrees for 20 minutes, until lightly browned and bubbly.

ANTIPASTO MAC

  • 1/2 cup sun-dried tomatoes
  • pound cavatappi or cellentani
  • 9 ounce package frozen artichoke hearts, thawed
  • tablespoons unsalted butter
  • tablespoons all-purpose flour
  • cups 2% milk
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon each salt and pepper
  • 1/2 pound Fontina cheese, grated (2 cups)
  • 1/4 pound Asiago cheese, shredded (1 cup)
  • 12 ounce jar roasted red peppers, drained and diced

1. Bring a large pot of lightly salted water to boiling. Carefully remove 1 cup of the boiling water and pour over sun-dried tomatoes in a medium bowl. Let stand for at least 5 minutes while making sauce. Add pasta to remaining water; cook 8 minutes, or as per package directions. Add artichoke hearts for the last 4 minutes. Drain and set aside.

2. Meanwhile, melt butter in a medium saucepan over medium heat. Sprinkle with flour and cook, whisking, for 1 minute. Pour in milk, oregano, salt and pepper. Bring to asimmer. Cook, whisking, 3 minutes.

3. Remove from heat and whisk in both cheeses. Drain and chop sun-dried tomatoes and stir into cheese sauce along with roasted peppers. Combine sauce with pasta-artichoke mixture and serve.

BUFFALO MAC

  • pound fusilli or rotini
  • pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • teaspoon celery seed, crushed
  • teaspoons paprika
  • 1/4 teaspoon salt
  • tablespoon olive oil
  • celery ribs, diced
  • cloves garlic, minced
  • tablespoons unsalted butter
  • tablespoons all-purpose flour
  • teaspoons dry mustard
  • 2 1/2 cups 2% milk
  • 1/2 cup Frank’s RedHot BuffaloWings Sauce
  • ounces sharp cheddar, shredded
  • 3/4 cup crumbled blue cheese
  • 1/2 cup plain bread crumbs

1. Heat broiler. Bring a large pot of lightly salted water to boiling. Add pasta and cook 8 minutes, or as per package directions; drain.

2. Meanwhile, season chicken with 1/2 teaspoon of the celery seed, 1 teaspoon of the paprika and the salt. In a large skillet, heat oil over medium-high heat. Brown chicken, 3 to 5 minutes, until cooked through; set aside. Lower heat to medium. Add celery to same skillet; saute 4 minutes. Add garlic; cook 1 to 2 minutes. Set aside with chicken.

3. In saucepan, melt 3 tablespoons ofthe butter over medium heat. Sprinklein flour and mustard powder, whiskingfor 2 minutes. Pour in milk and sauce,whisking until it boils. Simmer3 minutes. Remove from heat; stir incheddar, 1/2 cup of the blue cheese andremaining teaspoon paprika.

4. Add pasta, celery, garlic and chicken. Place in a broiler-safe dish.

5. Microwave remaining tablespoon butter for 30 seconds. Stir in bread crumbs and remaining 1/2 teaspoon celery seed; sprinkle over dish with remaining 1/4 cup blue cheese. Broil 2 to 3 minutes, or until browned.

GOAT CHEESE, FIG and WALNUT MAC (this would make great little appetizers!)

  • 2 1/2 cups 2% milk
  • sprig fresh rosemary
  • pound gemelli
  • tablespoons unsalted butter
  • tablespoons all-purpose flour
  • 4 ounce log goat cheese
  • 1/2 teaspoon salt
  • cup dried figs, sliced
  • cup chopped toasted walnuts

1. Add milk and rosemary to a small lidded saucepan over low heat. Cover for 20 to 25 minutes, allowing herb to infuse. Remove rosemary sprig.

2. Meanwhile, bring a large pot of lightly salted water to boiling. Add gemelli. Cook 10 minutes, or as per package directions; drain and set aside.

3. In a large saucepan, melt butter over medium heat. Sprinkle in flour, whisking constantly for 2 minutes. Pour in infused milk, whisking until it comes to a boil. Simmer until thickened, about 3 minutes. Crumble in goat cheese, piece by piece, stirring until smooth. Add salt, figs, walnuts and cooked gemelli. Serve immediately.
