A long time ago my grandmother gave me the book “Don’t sweat the small stuff”.  The focus was to look at the big picture on life and not get caught up and worry about details.

Just this weekend I bought a big bag of lemons to make lemon curd.  It’s a bit tedious, but the end result is worth it.  I made two batches.  Sunday morning I had a puff pancake with the lemon curd mixed with plain greek yogurt and fresh raspberries.  It really is the small things that can make life so enjoyable.

  

Here are some great “small things”

  • compliment people- at least three a day
  • say “please” and “thank you”
  • laugh, a lot
  • reign in your temper and bite your tongue, treat others as you would like to be treated
  • be brave
  • forget the “Joneses” 0r “Smiths”
  • find a small pleasure everyday
  • get some fresh air and breath deeply
  • dont major in minor things
  • take charge of your attitude
  • read
  • dont be afraid to admit “I  don’t know, I made a mistake, I need help, I am sorry”
  • be a good loser
  • dont go to bed with a sink full of dirty dishes
  • live life as an exclamation not an explanation
  • big problems can be disguised as big opportunities
  • never waste a chance to tell someone you love them

LEMON CURD

  • 1/2 cup fresh lemon juice
  • lemon zest
  • 1/2 cup sugar
  • 2 eggs
  • 1/4 cup unsalted butter, cubed
Mix sugar and zest from lemons in a large glass bowl.  Add lemon juice and eggs, stirring well.  Place bowl over a pot of simmering water and wisk constantly till thick- may take 10 minutes or so.  Then strain curd to remove zest and place in a food processor addding cubes of butter till incorportated.  Place in an air tight container and chill.
Delicious mixed with yogurt, whipped cream, used in fillings, muffins, cupcakes/cakes, pies……
