We had a torrential downpour last night through this morning and my paper is soaked! I am trying today it out now in the laundry room to salvage for price matching. I’ll post link so you can check out each stores ad for the week.
This week I have been flying solo while the Hubby is traveling. So far I have one with croup and one with an ear infection. Someone, usually me, always gets sick as soon as the Hubby leaves. One nice thing is, when El Jefe is gone, we have fun simple dinners.
Since I am not a big meat eater, we tend to do a lot of veggie heavy meals, but you can easily add meat to any of them
MONDAY: Make Your Own Pizza
I buy pizza dough from Papa Johns, under $2 per dough ball, and we then make our own pizzas. I pull out sauce, cheese, shredded veggies, and anything else the kids want to throw on. For myself I sliced polenta and roated it in the oven so it was a little crispy. I topped it with sliced tomatos, parmesan and pesto.
1 1/2 cups milk
1 Tbs oil
1 c. flour
Beat all ingredients well with a wisk. Pour out about 1/3 c. of batter into a hot (cooking sprayed) skillet. Crepe is done when the top looks dry. Take out and repeat with the rest of the batter.

Roasted cauliflower (I ate most of it right off the pan!)
Ricotta with chopped artichokes
Chopped tomatoes, basil and provolone
Leftovers or anything you like!
WEDNESDAY: SLOW COOKED BBQ CHICKEN
2 teaspoons salt
1 1/2 teaspoons paprika
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1 (3- to 3 1/2-lb.) cut-up whole chicken
1/2 cup cola soft drink
1/3 cup ketchup
1/4 cup firmly packed light brown sugar
2 tablespoons apple cider vinegar
2 tablespoons bourbon
1 lemon, sliced
Stir together first 4 ingredients in a small bowl. Sprinkle over chicken. Place chicken in a single layer in a lightly greased 6-qt. slow cooker. Whisk together cola soft drink and next 4 ingredients in a small bowl. Slowly pour mixture between chicken pieces (to avoid removing spices from chicken). Place lemon slices in a single layer on top of chicken. Cover and cook on HIGH 5 hours (or on LOW 6 1/2 to 7 1/2 hours) or until done. Transfer chicken pieces to a serving platter; discard lemon slices. Skim fat from pan juices in slow cooker. Pour pan juices over chicken; serve immediately.
FRIDAY: Cornbeef with a twist
Place the corn beef in the crock pot and cover with water. Add the seasoning packet that comes with the meat, 2 whole stalks of celery, 2 whole carrots, 1 onion cut in quarters, 1-2 potatoes cut in half. Cook on low 6-8 hours. I serve the meat over roasted potato soup and cabbage sautéed in butter on top.
