Labor Day is fast approaching which usually marks the end of summer.  Pools close.  Schools are in full session.  The last of the BBQ items go on sale.

Monday I made Pasta with Leeks and Bacon which had no leftovers.

Tuesday I made Pork Chops and Potatoes.  YUM

Cook 4-6 slices of bacon till crisp.  Remove from pot.  Salt and pepper boneless pork chops ( I had 8).  Brown them all pn both sides, but don’t cook through, and remove. Slice one onion in half and then into thin half circle strips.  Slice 8 waxy potatoes (they have a thin skin and won’t dissolve when cooked for a long time).

In the same pot that the pork browned in add half the potatoes and onions.

Then add the pork chops and bacon.

Then add the rest of the potatoes and onions and pour 1/2 c. white wine and 1/2 c. chicken stock into the pot.  Cover and bake at 325 for 1.5 -2 hours.

You could also do this in the crock pot.

Wednesday we are having Zupa Toscana

Cook 1 pkg sausage.  Remove and saute onion sliced in half moon shapes and 4 garlic cloves.  In a stock/soup pot add sausage, onions, garlic, 1 large box of chicken broth/stock, 4 waxy potatoes cut in half and sliced thin.  Bring to a simmer and add 3 handfuls spinach or kale.  Simmer for 30 minutes and add 1/2 – 1 cup cream or 1/2 and 1/2.

Friday will be teriyaki beef and vegetable stir fry
